Silver Palate Black Bean Soup

Ingredients
1 cup Olive Oil3 cups chopped onion8 garlic cloves, peeled and crushed2 lbs (900g) Black Beans, soaked in water overnight1 meaty ham bone4 quarts of water2 tbsp + 1 tsp cuminseed1 tbsp dried oregano3 Bay Leaves1 tbsp salt2 tsp pepperpinch of cayenne (I like scotch bonnet hot sauce too)6 tbsp parsley, chopped1 red pepper, chopped1/4 cup sherry (or rum)1 tbsp Brown Sugar1 tbsp Lemon Juice2 cups plain yogurt
Directions
Heat the oil in soup pot, add onions, garlic and saute about 10 min.
Drain the beans and add them, the ham bone, and water to the pot. Stir in all the spices, and half the parsley. Bring to a boil, reduce heat, and cook uncovered until beans are tender and liquid is reduced by 3/4s. (1-1/2 to 2 hours)
Remove the bone, and cut off any meat on it, and put meat back into the pot.
Add the remainig parsley, red pepper, sherry, suger and lemon juice. Simmer for 30 minutes.
Serve hot with dollop of yogurt.
