Grass-fed Beef Stew

2 pounds of grass-fed beef2 Tbsp. whole wheat flour3 Tbsp. canola oil (or similar)1 tsp. salt1/2 tsp. pepper3 cups water2 medium onions, chopped8 medium carrots, chopped6 medium potatoes, chopped3 stalks celery, chopped1 beef bouillon cube1 Tbsp. dried parsley1 or 2 bay leaves
Dredge beef in flour. Heat oil in pot or dutch oven and brown beef on all sides. Add water, bouillon, salt, pepper, parsley, bay leaf, onion. Simmer 1-2 hours until beef is tender.
Add vegetables and simmer 45 minutes or until vegetables are tender. Add flour to thicken as desired.
Makes about 10 1-cup servings.
