Shiitake and Edamame Couscous

1 cup whole wheat couscous3/4 cup frozen shelled edamame1 1/2 cups water1 T olive oil1 package (3-4 oz) shiitake mushrooms, sliced1 T tamari,divided1/4 cup onion, dicedSalt and Pepper to taste
Bring the water to a boil. Add edamame, cook 1-2 minutes. Stir in couscous, turn off heat, and let sit 5-7 minures. Meanwhile, heat the oil in a small sauce pan. Add the mushrooms, cook 1-2 minutes, Add the onion and 2 t of the tamari. Cook 1-2 minutes more. Add to the couscous and edamame. Stir in the remaining 1 t tamari, fluff with a fork and serve.
Makes 6 servings.
