tofu and peas curry

Ingredients
* Tofu, extra firm, 350 grams (remove) * Peas, frozen, 2 cup (remove) * Onions, raw, 1 large (remove) * Red Ripe Tomatoes, 2 plum tomato (remove) * Chili powder, 2 tsp (remove) * Paprika, 1 tbsp (remove) * Pepper, black, 1 tsp (remove) * Garlic powder, 1 tsp (remove) * Ginger, ground, 1 tsp (remove) * *Cumin seed, 1 tsp (remove) * Olive Oil, 2 tbsp (remove)
Directions

chop tomatoes and keep aside

Mix all the dry spices with vinegar to become a thick paste.
Cut the tofu into 1/4 inch cubes. Put one tablespoon f oil in a non-stick pan and fry the tofu until browned on all sides. Do not burn. Remove tofu and keep aside.
Put one tablespoon of oil in pan and heat. when hot add chopped onions and fry till soft.
Now add the spice paste and stir on low heat till mix leaves the pan (about 2 minutes).
Add the chopped tomatoes and cook till soft.
Add the tofu and cook for 5 minutes.
Add water if mixture is dry and sticking. Add about 1/2 cup water and heat on med to high heat. Lastly add the peas and cook till peas are done.

Add salt and vinegar to taste

Makes 10 1/2 cup servings
