Tomato, Spinach and Lentil Soup

Ingredients
1 c. Chopped Onion1/2 c.Chopped Celery1 clove minced garic2 TBL EVOO1 28oz. Can Crushed Tomato with Basil4 c. Chicken Broth1/2 c. Fat Free Half and Half1/2 c. Lentils1 10oz pkg Frozen Spinach
Directions
Saute onion, celery and garlic in olive oil until soft. Add the rest of the ingredients. Bring to simmer. Simmer 20-30 minutes or until lentils are cooked. Makes 6 hearty portions.
