Spanish Rice

Ingredients
1 tablespoon olive oil2 cups uncooked long-grain white rice3/4 cup onion, chopped1 tablespoon garlic, chopped1 green pepper, chopped14.5 oz can diced tomatoessalt and pepper to taste1/2 tsp chili powder1/4 tsp cumin4 cups vegetable broth
Directions
In a large skillet, on medium-high heat, combine oil, green pepper, rice, onion, garlic, seasonings, salt and pepper until the rice is a light brown color. Remove skillet from stove.
Mix tomatoes into the mixture and pour in broth. Return the skillet to the stovetop and bring the mixture to a full boil. When the mixture begins to boil, cover the skillet, and reduce heat to a simmer. Cook 12 to 15 minutes and NEVER remove the cover. This step is pertinent. After 12 to 15 minutes, turn stove off and let stand for another 12 to 15 minutes. DO NOT remove cover until the time is up!
