Iksender Kabobs ~ Chicken & tomato stew

1 TBS Olive Oil24 ounces of Chicken breast, diced1 lg onion, choppedclove garlic8 oz tomato pureeground cumin and pepper, to taste1/2 c skim milk yogurtParsley for garnish, if desired
In a pan, heat the oil, onions, garlic and chicken until juices run clear. Add tomato puree and spices. Simmer on the stovetop for 10 minutes.
While the "sauce" is simmering, heat up pitas/flat bread in the oven. When they are warm and toasted, chop in bits, add to your plate and drizzle with TBS of melted smart balance. Immediately add the tomato sauce.
Top with a TBS of plain yogurt. Add parlsey. Enjoy!
