Nancy´s Holiday Fruitcake

Ingredients
1/2 cup, pitted, chopped Dates1/2 cup (not packed) Raisins, (or chopped dried apricots)1/2 cup, pitted, chopped Prunes1 cup water1/2 cup unsalted Butter3 Egg whites1/4 tsp Salt1 tsp Baking Soda1 cup Whole Wheat Flour1 tsp Vanilla or Rum Extract1/2 tsp ground Cinnamon1/4 tsp ground Nutmeg1/2 cup chopped Walnuts
Directions
Boil all of the fruits and water for 5 minutes. Add the butter and set aside to cool. Add the remaining ingredients and stir well. Bake 20-30 minutes at 350 degrees F in greased loaf pan. (Can also add coconut, dried papaya, dried pineapple, dried cherries, dried cranberries - be sure to adjust the calorie content.)
