Ingredients

4 baking potatoes (cut lengthwise)4 tbsp bacon bits1/4 c shredded mozza cheese1 c reduced fat sour cream8 tsp fresh chives1 tbsp Becel light
Wash baking potatoes
Prick potatoes with fork.
Bake at 400 for 45 minutes or until soft.
Let cool
Cut each potato lengthwise=(8 halves)
Scoop out a half of the center of each half and keep for making mashed potatoes on another day.
Brush each half with becel
Sprinkle bacon bits and cheese on each half
Put back in oven and bake 350 for 10-15 minutes or until crisp.
Add Sour cream and chives as garnish
