Moroccan-Style Brown Rice

Ingredients
2 c. Medium Grain Brown Rice4 c. chicken broth1 t. olive oil1/2 t. salt4 T. finely chopped Kalamata black olives2 green oinions, finely chopped2 T. chopped fresh mint leaves2 T. chopped fresh parsley leaveslemon zest from 1/2 lemon finely chopped
Directions
Place rice, broth, salt, and olive oil in a large saucepan with a lid. Bring to a boil. Decrease heat to low and allow to simmer about 30 minutes or until rice is tender and all broth is absorbed by rice.

Fluff rice with a fork and toss in a large bowl with remaining ingredients. Serve warm or at room temperature.
