Great Grandma Wall's Stuffing

-1 cup of butter-3/4 cup of diced onion-1/2 cup of diced celery-1/2 cup of chopped parsley-1/4 cup of diced green peppers-1 small can of chopped mushrooms-2 teaspoons of salt-1/2 teaspoon of black pepper-1 & 1/2 teaspoons of poultry seasoning-10 cups of toasted bread cubes (a 1 lb loaf is about right)-1 beaten egg
In a large pot, melt the butter and gently sauté the onion (until soft), celery, green peppers, parsley and mushrooms.
Mix the dry ingredients in a large bowl and add them to the butter mixture.
Blend in the beaten egg and a little hot water (or chicken stock) and stir well to make sure all the veggies and spices are distributed.
You can bake it in a covered, oven proof dish for an hour or so at 350 or stuff it in a turkey if you wish.
**If you cut the recipe in half, it will be enough to stuff a couple of chickens.
