1 tsp Olive oil1 tsp Garlic1/4 cup chopped onions1/4 Cup chopped Bell Peppers1/4 cup crumbled firm Tofu2 TBSP Nutritional Yeast1/2 tsp Vegetarian chicken buillion or powdered seasoningSalt and Pepper to taste
Saute garlic, onion and Peppers in olive oil till tender. Crumble in tofu, add nutritional yeast and ceasonings and stir together. Cover and simmer for 15 minutes. Can be cooked uncovered if you prefer it drier.

I thought this was quite good. I didn't have nutrional yeast (nor do I even know what it is yet...newbee vegetarian and cook), so don't know if I altered the taste in any way. I did add a splash of low sodium soy sauce, which gave it a little more depth to the flavor. I plan to make this again! - 10/4/09
