1 sweet onion, chopped1 orange pepper, chopped2 cups sliced okra1 can diced tomatoes1 1/2 cup shelled edamame1 can corn2 tsp garlic1/2 tsp chipotle powder
Dry saute onion over medium high heat. Add pepper and continue. add garlic, then sliced okra. Keep stirring over medium high heat so that okra doesn't go gluey. when some browned edges appear, add tomatoes. When those are heated through, add edamame, corn and chipotle powder. Simmer until okra and edamame are done. Serve with tabasco.

POSITVEGRRRL
I made a few alterations. First, I used some vegtable oil, instead of dry saute. Nnext whenever possible I used Fresh Produce. Finally, I used Zucchini instead of okra, and added a little Liquid Smoke seasoning along with the Chipotle Powder.
DELICIOUS!! It reminds me of an outdoor BBQ. - 8/6/07
