Orange Tofu

Ingredients
16oz Tofu.5c Orange Juice.5c Water2tbsp Lemon Juice1.5tbsp Soy Sauce2.5tbsp Rice Vinegar3tbsp Brown Sugar1.5tbsp Orange Zest2 cloves garlicdash Cayenne pepper (to taste)1tbsp Vegetable Oil1tbsp Cornstarch1tbsp WaterAdd vegetables, such as broccoli and zucchini, and rice as desired. Sauce recipe may be multiplied if additional ingredients are added.
Directions
Drain and press tofu, then slice into bite size pieces and set aside.

In a small saucepan, mix all ingredients except tofu, olive oil, cornstarch, and 1tbsp water. Cook on med-high until boiling. Set aside. If desired, marinate tofu in sauce.

Heat wok and pour in oil. Brown tofu for about 5-10 minutes, stirring occasionally to allow each side to brown. Set tofu aside. Cook any vegetables in the wok for about 2 minutes. Add sauce. Add tofu.

Mix together cornstarch and 1tbsp water. Stir mixture into the wok. Allow sauce to thicken. Serve over rice.
