Barry's Vegan Pecan Pie

Ingredients
2 "eggs" from (Ener-G Egg Replacer)1 cup Karo Light Corn Syrup1/4 cup sugar2 tbsp flour1/4 tsp salt1 tsp vanilla1.25 cup pecans
Directions
Preheat oven to 375 degrees Fahrenheit.

Spread pecans in an unbaked 9" pie shell.

Mix remaining ingredients and pour over pecans.

Bake at 375 for 40 to 50 minutes or until filling is set.

    Wonderful. I did use egg substitute, so not entirely vegan. I would chop some of the pecans and leave the rest whole the next time. My husband ate most of it and wants another one. May take a little longer to bake. Check for doneness. - 1/3/11
