Fish and Leek Pie with Swede Mash and Peas

400 ml skimmed milk200g White Fish200g Smoked Haddock Fillet1/2 Swede (approx 400g)4 Large Carrots45g Salted Butter45g Plain Flour1/2 tbsp Dried Parsley1 tbsp Sunflower Oil2 Medium Leeks 200g Frozen Peas
1: Pre-heat the oven to 200 (180 for fan assisted) or gas mark 6.
2: Pour milk into shallow pan reserving 1 tbsp. Cut fish into pieces and add to pan. Simmer and cook for 3-5 mins. Remove fish from pan using slotted spoon and drain on kitchen paper. Strain the cooking milk into a jug and set aside.
3: For the mash, cook swede and carrots in boiling water until tender. Drain and mash with reserved milk,season with black pepper.
4: Melt the butter in small pan, add the flower until mixture comes together. Remove from heat, add a little cooking milk from fish and stir. Return to heat and slowly add the rest of the cooking milk whisking constantly. Season with black pepper.
5: Heat the oil in frying pan and cook the leeks for 3-4 mins. Put the leeks fish and peas into a 1 litre oven proof dish, pour over the sauce and gently mix together. Top with the mash and cook in oven for 35 mins.
