Canary Islands Potatoes with Mojo Sauce

Ingredients
3 small red potatoes1/4 cup red wine vinegar1 Tbsp vegetable broth1 Tbsp minced garlic1/2 tsp paprika1/4 tsp cumin1/8 tsp cayenne 1/4 tsp salt1 tsp parsley
Directions
Cut the potatoes in half. Bring a large pot of water to boil and add the potatoes. Cook until tender but not mushy, about 15 to 20 minutes; drain.

Meanwhile, make sauce by whisking together the remaining ingredients in a small bowl. Transfer the potatoes to a serving dish and pour sauce over them, stirring to mix. Serve hot.
