2 c whole wheat flour1 1/3 c quick or old fashioned oats1 tsp baking soda1 tsp cinnamon1/2 tsp salt1 c (2 sticks) butter, softened1 c packed brown sugar1 c Splenda1 c solid pack canned pumpkin1/4 c egg substitute1 tsp vanilla extract3/4 c. dark chocolate chipsPreheat oven to 350 degrees. Lightly grease cookie sheets or line with parchment paper.Combine flour, oats, soda, cinnamon, and salt in medium bowl. Beat butter, brown sugar, and Splenda in large mixer bowl until light and fluffy. Add pumpkin, egg subsitute and vanilla; mix well. Add Flour mixture; mix well. Stir in chocolate chips. Drop by rounded tablespoons onto prepared cookie sheets.Bake for 14-16 minutes or until cookies are lightly browned and set in the centers. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
