Stuffed Delicata Squash

Ingredients
1 delicata squash, halved1/4 tsp olive oil1/3 lb lean ground beef2 tsp minced garlic1 tsp ground giner2 tsp dried thyme1 tbsp ground sage2 tbsp craisins3 tbsp cooked brown rice1 eggsalt and pepper, to taste.
Directions
Preheat oven to 400.
Halve squash lengthwise, scoop out pulp. Rub lightly with 1/4 tsp olive oil, and sprinkle with salt and pepper. Place cut side up in a casserole and roast in the oven for 15-20 min.

While squash is roasting, mix remaining ingredients together. Remove squash from oven and stuff with beef mixture. Return to the oven for an additional 20-30 minutes, or until stuffing is browned on top.
