Chocolate Bread & Butter Pudding

1 cup milk1¼ cups cream4 egg yolks½ cup sugar2 tsp vanilla extract200g brioche, torn into pieces200g dark chocolate, chopped
Preheat the oven to 180ºC. Place the milk and cream in a small suacepan over medium heat until it just comes to the boil. Remove from the heat and set aside. Place the egg yolks, sugar and vanilla in a bowl and whisk to combine. Gradually add the warm milk mixture, whisking to combine.
Divide the brioche and chocolate between 4 x 1 cup capacity cups. Pour over the milk and egg mixture and place the cups in a baking dish. Pour in enough hot water to come halfway up the side of the cups. Cover with foil and bake for 20 minutes. Remove the foil and continue baking for a further 30 minutes or until set and golden.
