3 cups cooked turkey, diced1 package mushrooms, diced1 small can water chestnuts, diced3 green onions, sliced very small5 tbsp brown sugar4 tbsp soy sauce2 tbsp rice vinegar1 head of lettuce (iceberg)

Turkey Lettuce Wraps

Ingredients:

3 cups cooked turkey, diced
1 package mushrooms, diced
1 small can water chestnuts, diced
3 green onions, sliced very small
5 tbsp brown sugar
4 tbsp soy sauce
2 tbsp rice vinegar
1 head of lettuce (iceberg)

Dice (as small as you can - you can also use a food processor) mushrooms, water chestnuts, cooked turkey, and green onions. Mix the brown sugar, soy sauce, and rice vinegar in a small bowl.

Put turkey mixture into a skillet, and add sauce mixture. Cook over medium heat until heated through. Serve in a lettuce leaf. (Repeat as desired...)

Garnish with rice sticks, if desired.

    Excellent and unusual way to handle turkey leftovers. I used Boston lettuce rather than iceburg and because of the low calories, I had two for dinner with a small serving of brown rice on the side --- thank you! - 1/16/10

    This was very good. Next time I'll put only 4 T of sugar-- a hair to sweet for me. The lettuce from my garden was too floppy for rolling so I pretty much made a salad and added 1/2 c brown rice and some hot chili paste. Very good. - 5/20/12

    Awesome... It is SO nice to have something other than leftover soup or casserole! I substituted a small can of mushrooms for fresh and it was still great. I like that this recipe uses items I generally have on hand. - 11/27/10
