5 tbsp butter1 cup splenda1 cup packed brown sugar1/2 cup egg whites2 tsp vanilla extract3 cups mashed bananas- very ripe3.5 cups all purpose flour2 tsp baking soda1/2 tsp baking powder1 cup unsweettened apple sauce2/3 cup chopped walnuts
Preheat oven to 350F. Spray bottom only of loaf pans with cooking oil. Beat butter in large bowl with electric mixer at medium speed until light and fluffy. Add splenda, brown sugar, beat well. Add egg whites and vanilla, beat until well blended. Added mashed banana and beat on high speed for 30 seconds.
Combind flour, baking soda, baking powder in medium bowl. Add flour mixture to butter mixture a little at a time beating between additions. Add walnuts to batter and mix well.
Pour batter evenly into prepared pans. Bake until browned and toothpick inserted near center comes out clean, about 1 hr, 15 min.
Cool in pan on wire rack 10 min, loosen sides with spatula and turn out onto wire rack. Cool completely.
Makes 2 loaves, for a total of 28 slices. 1 serving = 1 slice.
