Gluten Free Banana Nut Muffin

Ingredients
1/4 cup brown sugar2 large eggs1.5 tablespoons coconut milk1 ripe banana2 tablespoons chopped pecans1/2 tsp baking powderpinch sea salt1/4 tsp ground cloves1/4 tsp cardamom1/4 tsp cinnamon1/2 cup coconut flour2 tablespoons coconut oil1/2 tsp pure vanilla2 tablespoons shredded coconut1/2 tsp candied ginger1/2 tsp baking soda
Directions
Preheat to 350.
In a mixer put in eggs, sugar and set on low to dissolve sugar crystals, then add coconut milk oil, vanilla, and spices. Let blend for about a minute. Turn off motor and add remaining dry ingredients, Blend well.
Prepare muffin tins with pam spray. fill each with batter to tops.
Bake 20 minutes.

Makes about 5-6 servings.
