African Peanut Soup

Ingredients
1 cup basmati rice2 cups water1 Tbsp olive oil1/2 cup chopped onion3 cloves garlic, chopped2 cups water2 cups vegetable broth1 28 oz can crushed tomatoes1/2 cup natural peanut butter2 Tbsp balsamic vinegar1/2 tsp salt1/2 tsp crushed red pepper flakes1/4 tsp pepper
Directions
Cook rice in a medium sized pot with a pinch of salt.
Meanwhile, saute onion and garlic in olive oil over medium heat until soft, about 5-10 minutes.
Add water and stock, then whisk in peanut butter and crushed tomatoes. Stir in vinegar and spices.
Once rice is cooked, stir in one cup cooked rice into soup. Simmer 10 minutes more.
Serve with additional rice on top. You can also add chopped peanuts and or green onion.
