Roasted Cauliflower with Lemon and Parmesan

Ingredients
1 head of cauliflower, cut into florets2-3 cloves of garlic, peeled and coarsely minced Lemon juice (from 1/2 or a whole lemon) 2 tbsp Olive oil Coarse salt and freshly ground black pepper 2 tbsp Parmesan cheese
Directions
Preheat oven to 400°F. Place the cauliflower florets in a single layer on a rimmed baking sheet. Toss with garlic and olive oil.

Bake, uncovered, for 25-30 minutes, or until the top is lightly brown. Fork tines should be able to easily pierce the thickest part of the cauliflower stem when done. Remove from oven, squeeze the lemon over the cauliflower and sprinkle with Parmesan cheese. Serve immediately.
