Couscous, garbanzo, and cranberry salad

3 cups dry couscous or Israeli couscous1 cup grapefruit or orange juice3 cups watercoriandersaltpepper1.5 cups dried cranberries (or less)1 cup slivered almonds2 large oranges, zest and flesh (chopped into bite-size pieces)1 tangerine, zest and flesh (chopped into bite-size pieces)1 tbsp fresh mint, choppeda few leaves butter lettuce, watercress, or other greenery, chopped1 15-oz can garbanzo beans1 tbsp olive oil1 tbsp lemon juice (or more to taste)salt, pepper
Measure out 3 cups of Israeli couscous. Cook with water and orange or grapefruit juice according to package instructions.
When cooked, stir in cranberries, almonds, orange and tangerine flesh and zest, mint, butter lettuce or other greenery, garbanzo beans, and oil. Add lemon juice, salt, and pepper to taste.
Serve warm or at room temperature.
