Vegan Alfredo Sauce

Ingredients
1 package Mori-nu tofu light (firm)1 tsp. salt1 tsp. lemon juice3 TBSP nutritional yeast flakes2 cloves garlic1 shallot1 tsp. onion powder1/2 c. light plain soy milk1 tsp. dried parsley or 1/4 c. fresh minced parsley
Directions
Put into a blender, 1 package of Mori-nu lite Tofu (firm), 1 tsp. salt (or to taste), 2 cloves garlic, 1 shallot, 1 tsp lemon juice, 3 TBSP nutritional yeast flakes, 1 tsp. onion powder. Blend until very smooth.

Then add in 1/2 cup light plain soy milk. Blend until well mixed. Heat until steaming (no need to boil). Add in 1 tsp dried parsley flakes or 1/4 c. fresh minced parsley. Serve over your favorite pasta. You can also add in steamed veggies such as broccoli, peppers and onions.
