One-Dish Chicken and Rice

1-10 oz can cream of chicken soup1/2 cup milk1/4 teaspoon pepper1/3 cup mayonnaise2 cups cooked checken1/2 cup chopped onion1 cup frozen vegetables (your choice)1/4 cup chopped green or red bell pepper2 cups cooked white rice1 cup shredded Cheddar cheese, divided
Step 1
Preheat over to 350 degrees. Blend soup, milk, pepper and mayonnaise in a medium bowl. Combine chicken, onion, vegetables, bell pepper and rice in a large bowl. Mix gently.
Step 2
Gently fold soup mixture into chicken misture to combine. Fold in half the cheddar cheese.
Step 3
spray a medium casserole dish with cooking spray. Spoon in chicken mixture.
Step 4
Sprinkle top of casserole with remaining cheddar cheese. Bake until top is golden brown about 25 minutes.
