Protien packed Shortbread

Ingredients
3 cups All purpose flour1 cup whey protien powder ( Vanilla Icecream flavour) 1 pound of butter 3 cups of Icing sugar /powdered sugar2 tsp Vanille essence /extract
Directions
cream softened butter in mixer, when it is nice and soft add icing sugar, then add flour and vanilla and protien powder.
mix till smooth and forms a nice soft dough.
add chopped walnuts ( optional )

roll dough out carefully and use cutters to make small shortbread cookies,( like small round ones about 2 " diameter)... place on parchment paper to bake in oven at 325 - 350 F for 10 - 12 min till just golden....time will vary depending on size and shape of cookie.

cook on wire racks.

enjoy with a cuppa tea!

    I will use soy flour instead of regular white flour... for a change and ADDITIONAL protein! And I might even try half Splenda for the icing sugar! - 12/9/09
