Eggplant Parmesan

1 eggplant1/2 c. lowfat milk1 c. breadcrumbs2 T. italian seasoningdash pepper4 T. chopped onion1 clove garlic2 small or 1 large can diced tomatoes1 can tomato paste1 tsp. olive oil2 oz. parmesan cheese, grated
Peel eggplant and slice into 1/2 inch thick slices. Salt liberally on both sides and allow to sit for 15 minutes (this takes away any bitterness). Rinse thoroughly and pat dry. Mix breadcrumbs with 1 T. italian seasoning and dash of pepper. Dredge each eggplant slice first in milk and then in seasoned breadcrumbs. Place in single layer on baking sheet sprayed with vegetable oil spray. Bake at 400 degrees until slightly brown, then flip and brown other side (approximately 10 minutes per side).
Meanwhile, make sauce: Saute chopped onion and garlic in olive oil over medium heat until limp. Add tomatoes, tomato paste, 1 T. italian seasoning, and dash of pepper. Bring to a simmer and simmer over low heat while eggplant finishes browning.
Removed eggplant from oven. Spread a thin layer of sauce over the bottom of a casserole dish. Spread eggplant in a single layer, or slightly overlapped. Spoon 2-3 T. of the sauce over each. Sprinkle parmesan cheese evenly over tops of eggplant. Cover with foil and bake for 20 minutes. Remove foil and bake for 10 minutes more. Makes 4 servings. It is nice served with a side of whole-grain pasta covered with any remaining sauce.
