Chocolate Chip Banana Bread Mini Muffins (2 per svg)

Ingredients
1 2/3 cups basic white flour1 teaspoon baking soda1/4 teaspoon ground cinnamon1/2 teaspoon salt1/2 cup Splenda1/2 cup + 2 Tbsp granulated sugar2 eggs1 cup unsweetened applesauce2 medium bananas, very ripe, mashed2 Tablespoons sour cream1 teaspoon vanilla extract1/2 cup milk chocolate chips
Directions
Set the oven to temperatures listed with bake times below. Spray bottom of whatever type of pan you are using. When making mini muffins fill 3/4 of the way. When making regular muffins fill only half way (and count for double the servings). Or for a loaf, use parchment paper at the bottom and the loaf will simply just lift right out.

Sift together flour, baking soda, cinnamon and salt. Beat sugar and eggs with a wire whisk for a few minutes. Add applesauce all while stirring. Add mashed bananas, sour cream and vanilla. Fold in dry ingredients and this is where you could add anything extra like nuts or other fruits (try adding blueberries....it's yummy).
Pour into the loaf pans and bake for approximately
20 minutes at 325 for mini muffins
25 minutes at 325 for regular muffins
and
45 minutes at 350 for loaf
keep a close eye on the color to ensure it does not burn
