Natalie's pinto beans and rice

Ingredients
Directions
1/2 onion, diced1 bell pepper, diced2 cloves garlic, minced1 can diced tomatoes with juice1 envelope taco seasoning1 can pinto beans, drained1 pouch minute rice, cooked and drained
Bring water to boil and cook rice as directed.
Meanwhile:
Heat skillet over med heat. Spray with cooking spray. Add onion, garlic, and peppers. Cook, stirring occasionally 5-7 mintues, until soft.
Add Tomatoes and taco seasoning. Bring to boil and cook about 2 minutes.
Add drained pinto beans and cook until mixute is hot and bubbly.
Drain rice and stir into mixture.
Serve with Natalie's sour cream sauce if wanted (nutrition info not included here.)
