FerretMomm's Reduced Peanut Butter Cookies

Ingredients
1/2 C heart-healthy margarine (Smart Balance, ICBINB, etc)1/2 C natural low or no salt peanut butter1/2 C Splenda brown sugar blend1/2 C Splenda sugar blend for baking1/4 C egg substitiute1 tsp baking soda, dissolved in 2 Tbsp hot water1 1/3 C flour
Directions
Cream margarine and sugars, then add peanut butter and egg substitute. Beat well. Add hot water and soda, and then flour. Mix well. When dough comes together, form into 3/4" balls with floured hands, and place on cookie sheet. Flatten with a fork, criss-cross fashion. Bake at 350 degrees for 10 - 15 minutes. Makes 3 dozen-ish.
