AntCof's Cuban Black Bean Soup

Ingredients
2 Tbsp vegetable oil1 large onion, chopped (1 cup)3 cloves garlic, finely chopped1 Can Black Bean plus 1 can water1 Can Red Kidney Beans plus 1 can water1 Can Stewed Tomatoes plus 1 can water1/4 cup dark rum or apple cider1 cup finely chopped fully cooked ham1 1/2 tsp ground cumin1 1/2 tsp dried oregano leaves1 medium green bell pepper, chopped (1cup)
Directions
Heat oil in Dutch oven over medium heat. Cook 1 cup oion and the garlic in oil, stirring occsionally until onion is tender.

Stir in remaining ingredients ; heat to boiling. Boil 2 minutes; reduce heat to low. cover and simmer about 1 hour or until beans are tender.

Serve Soup with additional chopped onion .

Serves 8 = 1 1/2 cups each
