1 c. medium grain brown rice3 c. chicken broth or water1 bay leaf1 Tbsp. Olive oil1 c. chopped onion1/2 c. chopped celery1/4 c. seedless golden raisins1 tsp. grated ginger1/2 tsp. ground coriander1 tsp. turmeric1 tsp. garlic powder1 tsp. fennel seedsDash curry powderDash black pepper1 Tbsp. dark soy sauce
Combine all ingredients in a heavy pan and bring to a boil. Boil 3 minutes. Cover tightly and reduce heat to low and simmer for 50 minutes without disturbing, stirring or lifting lid. Turn heat off and allow to sit covered on hot burner for 20 minutes.
