Vegan Italian Sausage Panini

Using 1- 9" Whole Wheat tortilla stack the following in center1/2 link Tofurky, Italian sausage cut into long thin slices.65 ozs- Zucchini, cut into 3" strips3 each- fresh basil leaves.25 ozs- Roasted red pepper, julienned2 each- Tomato slices, fresh.25 ozs- Spinach leaves, freshFold bottom up, sides in and roll over to close. Should be about 5 x 5 inces square. Place on panini or George Forman grill w/ some Pam spray, cook for 2 minutes. Cut in half.
