Low Fat Huevos Rancheros with Mango Salsa

Ingredients
Mango salsa recipe for four servings: NI is for one serving with the Rancheros1 small mango cubed1T lime juice2/3 cup canned roma tomatoes3T red onion minced1 Serrano chili minced1/2 cup chopped cilantrodash of salt.Huevos Rancheros:1 corn tortilla1/3 cup egg whites2 thin slices avocado1/4 cup fat free refried beansheart of one sm/medium artichoke cubedcilantro as garnish
Directions
Mango Salsa: Combine all ingredients and let sit for flavors to merge for at least 20 minutes

Huevos: In a cast iron pan, with a little oil spray, heat the tortilla on one side. Flip over and spread the beans onto half the tortilla and the artichoke heart on the other. When heated through, carefully roll up and in the free space in the pan, cook the eggwhites.

Slide onto a plate. Top with avocado slices and salsa.
