Chicken in Cilantro Sauce

Ingredients
1 lb boneless, skinless chicken breats, cut into 1/2"pieces 2 small bell peppers, sliced into rings1 15 oz can diced tomatoes1/2 medium onion, coarsely chopped3/4 cup cilantro, divided1 clove garlicnonstick spray
Directions
Heat oven to 400º. Place pepper rings on spray baking sheet and spray with nonstick spray, bake until peppers are roasted. Place tomato sauce, onion, cilantro and garlic in blender. Spray medium skillet with spray; brown chicken . Add tomato/cilantro sauce to chicken in pan and heat to boiling; reduce heat and simmer 5 minutes until chicken is cooked. Serve chicken with sauce and roasted pepper rings. Sprinkle with additional cilantro.
