2 tsp butter1 1/4 cups onion, thinly sliced2 lg cloves garlic5 cup sweet potatoes, diced10 cups water2 Tbsp Sririchi, Thai hot sauce3/4 cup half and half
Directions
1. Melt the butter in a large saucepan over medium-low heat. Add the onion and garlic; stir to combine, cook until the mixture begins to soften.
2. Add the potatoes and enough water to cover. Increase the heat to medium-high; bring to a boil, then cook for about 30 minutes until they are tender. Remove from the heat. Keep a watch on the mixture and add more water as needed.
3. Transfer the mixture to a blender or food processor, pureeing it to a soup consistency. Return the soup to the saucepan over low heat; add the cream and hot chili sauce, stirring to mix well.
4. Add the salt to taste, stirring to combine; once the soup is heated through, divide among individual bowls and serve immediately, with a drizzle of the chili sauce and cream on each portion
