ED'S Roasted Root Vegetables

Ingredients
1 Tbsp Olive oil1 red onion, sliced2 carrots, peeled and sliced2 parsnips, peeled and sliced2 turnips, peeled and sliced1 sweet potato, peeled and diced6 cloves garlic,peeled and cut in half2 tbsp dried rosemary2 tsp dried thyme.5 tsp salt1 tsp black pepper1 tbsp baslamic vinegar, optional
Directions
Serves 10, Serving Size 1 cup

Preheat oven to 375. Combine all ingredients in mixing bowl with the exception of the baslamic vinegar. Place mixture on an oiled sheet pan and bake for 45 minutes. Tunr vegetables every 15 minutes. Cook until vegetables are tender and slightly browned. Drizzle with baslamic vinega ( optional).
