TSuzanne's Cornmeal Bread

Ingredients
3/4 Cup Cornmeal1 1/4 Cup Skim Milk2 med. Eggs2 tbsp. Butter1 cup all-purpose Flour1/3 cup Sugar1 tbsp. Baking Powder1/2 tsp. Salt
Directions
Combine cornmeal, milk, and vanilla extract in a medium sized bowl. Let stand for about 10 minutes.

In a large bowl, combine flour, sugar, baking powder and salt.

Add eggs and butter to the cornmeal mix (after it has set for 10 minutes). Mix well.

Add the wet mixture to the bowl of dry ingredients. Stir until just combined.

Spray a non-stick bread pan very lightly with cooking spray.

Pour mixture into the greased bread pan. Bake at 400 F for about 30 minutes. Insert a stainless steel butter knife in the middle of the loaf; remove from oven when the knife comes out clean. Let cool on backing rack before removing from pan.

One loaf = approximately 10 servings.
