Lime Baked Fish

Ingredients
6 (6 ounce) white fish filletsSpay Oil3/4 Teaspoon Salt1/2 Teaspoon Black Pepper3 Tablespoons Lime Juice1 (8 ounce) container of Light Sour Cream,1 Teaspoon chopped Parsley1 Teaspoon grated lime rind
Directions
Preheat oven to 400.
Coat a 9 x 13 dish with spray oil
Place fish fillets in dish, sprinkle with salt and pepper.
Combine lime juice, sour cream and parsley, stir well.
Pour over fish.
Sprinkle lime rind over fish.
Bake at 400 for 20 minutes till fish flakes easily with fork.
Serve over brown rice.
Makes 10 3-4 ounce servings.

Can substitute plain yogurt for sour cream.

    I'm not a big fan of lime with the fish, I think this would be great with lemon instead. Still a bright flavor. - 1/26/10
