Tortellini Vegetable Soup

Ingredients
2 teaspoons dried basil2 cloves minced garlic2 teaspoons vegetable oil4 cups beef broth or bouillon2 cups stewed tomatoes1 cup cheese tortellini1/4 teaspoon pepper1 1/2 cups frozen mixed vegetables
Directions
In a saucepot, saute the basil and garlic in the oil about a minute. Add broth, tortellini, and pepper. Bring to boiling, reduce heat, cover, and simmer for 10 minutes. Add tomatoes and mixed vegetables. Return to boiling. Reduce heat, cover, and simmer for 10 to 15 minutes til tortellini is done and vegetables are tender.

Makes four nice sized servings.
