Lemon Ricotta Panckaes

1/2 cup + 2 Tab filtered water1 egg1/4 Tab vanilla extract1/4 cup canola oil1 cup dry pancake mix1/3 cup ricotta cheese, low fat/light1 Tab lemon zest
Combine water, egg, vanilla and oil in bowl. Mix well. Add pancake mix to bowl and mix until combined. Whisk into mixture ricotta cheese and lemon zest. Warm nonstick skillet to medium heat. Do not use cooking spray or oil. Palce 1/4 cup batter onto skillet. Cook til bubbles form and edges begin to firm; flip.
Makes 8-9 pancakes.
