Home-made "Cream" of Mushroom soup

Ingredients
1 Cup fresh mushrooms (about a quarter pound)2 Tablespoons chopped onion2 Tablespoons Olive Oil2 Tablespoons flour2 Cups chicken or beef broth1/3 Cup 1% milk1/4 tsp. pepper1/4 tsp ground nutmeg
Directions
Slice mushrooms through caps and stems. In saucepan, cook mushrooms with onion in margarine for 5 minutes. Blend in flour; add broth. Cook and stir till slightly thickened. Cool slightly. Stir in milk, pepper, and nutmeg. Heat through. Serve at once. Calories calculated for 6 servings.
