Vegan Creamy 1-Minute Microwave Chocolate Cake

2 tbs. Flour4 tsp. Granulated Sugar1/4 tsp. Baking Powder3 tbs. Cocoa Powder1 dash Salt2 tbs. Soy Milk + 2 tbs. Soy Milk (for later)1 tsp. Vanilla Extract3/4 tsp. Cooking Oil
In a coffee mug, combine all ingredients except for the 2 extra tablespoons of soy milk. Mix well with a spoon until it forms a cake batter-like consistency and all dry ingredients have been mixed in.
Microwave on high for 1 minute. Test center to make sure it's done-- if not, continue microwaving in 15-second intervals until you're pleased with it :)

was quite dry and crumbly, but quick! makes a really small serving. i substituted whole wheat flour. used less vanilla extract (seemed like a lot for a little cake.) the taste of the baking powder was evident, which is probably why so much vanilla is called for. also too sweet for my taste. - 4/23/10
