Soup Diet Basic Recipe

Ingredients
1 lb. carrots, sliced3 med. onions (4 C. chopped)4 lg. celery stalks, sliced2 lg. garlic cloves, crushed2 cans (28 oz.) stewed tomatoes1/2 sm. head green cabbage, thinly sliced (6 C.)3/4 lb. green beans, cut into thirds48 oz. chicken broth6 C. watersalt & pepper3 med. zucchini, sliced into half-moons2 bags (6oz.) baby spinach
Directions
In 12-quart stockpot, cook carrots, onions, celery & garlic over med-high heat for 8 minutes.

Add tomatoes with their liquid, cabbage, green beans, broth, water, salt & pepper. heat to boiling over high heat.

Rduce heat to low, cover & simmer 10 minutes. Increase heat to high, stir in zucchini & spinach, heat to boiling. Reduce heat to low, cover & simmer 10 minutes.

Makes 28 cups

    It was a good, simple, basic soup - if you read up on the soup diet it is intended to be the basis of a variety of soups. For instance one day you could add chicken, corn, black beans and mexican spices like cumin and cilantro to make it mexican. Also supposed to be good with shrimp and turkey. - 1/3/14
