Turkey Pot Pie (Crustless)

1 medium white potato (or two small red potatoes)1 sweetpotato1/2 C white onion1 C carrots2 medium stalks of celery4 C turkey breast meat2 C milk, nonfat2 C vegetable broth1/4 C olive oil1/4 C flour, whiteGarlic to taste
Preheat over to 425 degrees.
Saute chopped white onion and the garlic in the olive oil until softened. Add the flour and bring the mixture to a bubble. Add the milk and the vegetable broth. Stir continually until the mixture comes to a boil.
Add your choice of raw vegetables - carrots and celery work best. Canned peas are also an alternative.
Add the cooked potatoes (bring to boil before adding).
Add the cooked turkey breast meat. After it reaches a boil, transfer to two pie tins and place in the oven. Cook for 30 minutes.

This was great. I had some turkey breast I wanted to beautify so I tried it, cutting it in half for the two of us. Used 1 onion, 2 carrots, red pepper, and 1 cup peas. Added black pepper and red pepper flakes. I cubed a potato, boiled it, and threw it in. 8x8 pyrex. DH went back for more. - 8/14/15
