Vegan Eggplant Parm

Ingredients
1 box vegan breaded Italian eggplant cutlets 2 jars of your favorite red sauce ( I use Patsy's Fra Diavolo)1 block Follow Your Heart Monterey Jack Style Soy Cheese shredded
Directions
put some sauce on the bottom of a pan
layer eggplant cutlets, more sauce then shredded soy cheese
reapeat
cover with foil
bake in a 400 degree oven for 30 mins
take foil off and continue to bake for 15 mins or until cheese melts
