Stir Fried Asian Veggies

Ingredients
3 cups Baby Bok Choy, sliced3 cups green cabbage, sliced1 red pepper, sliced5 oz (4-5 cups) Spinach, slicedgarlic- to taste1 tbs extra virgen olive oil1 tbs sesame oil1-2 tbs soy sauce
Directions
Slice all veggies.
Heat oils together in large fry pan or wok, add garlic and heat.
Lightly cook red bell pepper 1-2 minutes, stirring frequently.
Add Cabbage and Baby Bok Choy for another 1-2 minutes while stirring.
Add Spinach and fry for 1-2 minutes, stirring constantly, or until slightly wilted. Remove from heat and add soy sauce to taste, and serve!

Caution- spinach with continue to wilt after being remonved from heat.

Makes 6-8 1-cup servings.
